Celebrate spring with a dish that's just as pretty as it is delicious. This Baked Berry French Toast Casserole is filled with fresh berries, a hint of vanilla, and a touch of sweetness. Perfect for Easter morning, baby showers, or a relaxing spring weekend with family and friends.

Serves 12.

  • 1 loaf brioche or challah bread, cut into 1-inch cubes
  • 1 ½ cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 4 eggs
  • 1 ¼ cups milk
  • 1/3 cup heavy cream
  • 1/3 cup maple syrup or sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Pinch of salt
  • Powdered sugar (for garnish)

Preheat oven to 350°F and grease a 9x13 pan.

In a large bowl, whisk together eggs, milk, cream, maple syrup, vanilla, cinnamon, and salt.

Add bread cubes and gently stir to coat. Let sit for 5–10 minutes to soak. Fold in most of the berries, reserving a few for topping.

Pour mixture into pan and press gently to even it out.

Bake for 40–45 minutes, or until golden on top and the center is set (a knife should come out clean).

Let it rest for 10 minutes before slicing. Dust with powdered sugar just before serving.

Serving ideas:

  • Serve warm or at room temp
  • Drizzle with a little extra maple syrup
  • Pair with a light spring salad or fruit platter
  • Can easily be made ahead of time
